How is Honey made? 

We used to think honey was something bees simply collected.

They found flowers, gathered nectar, brought it back to the hive, and somehow, there was honey.

It sounded simple.

We were wrong.

The more time we spent around bees and beekeepers, the more we realised that the journey from flower to jar is much more remarkable than we had imagined.

Because honey doesn't really begin with honey.

It begins with a flower.

It starts with something very small

A flower produces nectar to attract pollinators.

The bees arrive looking for food, and while they are there, they collect some of that nectar and carry it back to the hive.

At this point, it doesn't look or taste anything like the honey we know. 

It is mostly water, with sugars and other natural compounds from the plant.

And this is where the bees begin their work.

When a bee returns to the hive, the nectar is passed between bees and begins to change. Natural enzymes from the bees help transform its composition, while the colony gradually reduces the water content.

The bees spread the nectar through the honeycomb.

They fan their wings.

They work together to create the conditions for the nectar to become honey.

Slowly, the watery nectar becomes thicker and more concentrated.

And something else happens along the way.

It begins to develop a character of its own.

The aroma.

The flavour.

The colour.

The texture.

We remember the first time we tasted natural raw honey straight from the farms.

It was a bit of a surprise.

We had tasted honey before, of course. But this tasted so different. 

It wasn't simply sweet. There was so much more going on — different aromas, flavours and textures that we hadn't expected to find in honey.

That was when we started to realise that honey could taste like a place.

And the more honeys we tasted, the more curious we became.

The bees know when it is ready

This is one of the things we find most fascinating.

The bees store the honey in the honeycomb and, as when the honey is ready, they seal it with a thin layer of beeswax. 

Almost like putting a lid on it.

For the colony, this is food for later.

For the beekeeper, it is one of the signs that helps them judge when the honey is ready to harvest.

But this is where we learnt that beekeeping is not simply about taking honey from a hive.

The honey may be ready. But the beekeeper still needs to know when to harvest, and when to leave it for the bees.

A good beekeeper has to know when to wait.

Which frames are ready.

Which should stay.

And, always, what the colony needs.

The bees always come first.

Every honey has its own character

This was when we started to understand something we had never really thought about before:

Honey carries something of the place it comes from.

A bee foraging in a Jarrah forest in Western Australia is living in a very different world from one foraging among the Longan orchards of Northern Thailand.

The flowers are different.

The landscape is different.

The weather is different.

Even the seasons are different.

And all of these things influence what the bees bring back to the hive.

That is why a Jarrah honey can taste so different from a Longan honey. One can be darker, richer and more earthy, while another may be lighter, more delicate and floral.

The more places we visited, the more we began to notice these differences.

The bees make the honey, but the landscape gives it its character.

And then comes the beekeeper

We used to think the beekeeper's main job was to harvest the honey.

We were wrong about that too.

The more time we spent with our beekeepers, the more we realised how much of beekeeping is about paying attention.

They watch the bees.

They watch the weather.

They watch the flowers and the condition of the hive.

They know when to move the hives, when to wait and, most importantly, when the colony needs something from them.

We learnt this firsthand in our own apiaries. 

For many seasons, we worked alongside our beekeepers, joining them in the apiaries and helping with the harvest. We learnt by doing — opening the hives, seeing the honeycomb and understanding what had happened in the hive before the honey ever reached us.

Today, we still visit them.

We still work alongside them when we can.

We still talk about the seasons, ask what they are seeing in the hives and learn from their experience.

We also receive a lot of advice from people who have spent years learning to read the bees and the landscape.

Because a good honey doesn't just come from a good season. It comes from people who know how to work with it.

And by the time the honey reaches us, there are already thousands of bees, experienced beekeepers and many careful decisions behind it.

From the hive to the jar

Once the honey is ready, the beekeeper carefully removes the frames from the hive.

The honeycomb is opened and the honey is extracted.

But even then, the journey isn't over.

How honey is handled after harvest matters too.

We want to preserve what the bees have made rather than unnecessarily changing it. That's why we choose to keep our honey raw, using gentle handling methods that allow it to retain as much of its natural character as possible.

For us, that means being thoughtful about temperature, filtration and everything that happens between the hive and the jar.

It is another reason we care so much about knowing our beekeepers and understanding how each honey has been harvested.

Because the work doesn't stop when the honey leaves the hive.

Our job is not to remake the honey. It is to take care of what the bees have already made.

And then we started wondering: what else could honey become?

Perhaps this was the natural next question for us.

After spending so much time learning about honey at its source, we became curious about what we could do with it once it reached us.

We started experimenting:  

Ginger. Rose. Peach. Lemon. Lime. Yuzu. Chili.

Tea leaves. Watermelon. Honeydew. Coffee. Vanilla. Mango. Mint. Coconut.

Some flavours felt like natural partners for honey.

Others surprised us.

And some sounded much better in our heads than they tasted in the jar.

We tasted, adjusted and tasted again.

We even brought some of our experiments into a food laboratory, where we could learn more about how different ingredients behaved with honey.

We quickly realised that creating a good infused honey wasn't simply about adding another flavour.

The honey already had a personality.

The new flavour needed to work with it, not hide it.

That curiosity eventually grew into the range we have today — from familiar flavours to some that were a little less expected.

Including Teh Tarik, which we created in celebration of Singapore's 60th anniversary.

It was a very different kind of journey from following bees through forests and orchards.

But somehow, it's connected.

We had spent years learning where honey comes from.

Now we were asking ourselves what could happen when we brought that honey into our own world.

And suddenly, a jar doesn't look quite so simple

This is probably what has changed most for us.

Today, when we look at a jar of honey, we don't just see something sweet.

We think about the flower.

The bee that found it.

The thousands of journeys between the hive and the landscape.

The colony transforming nectar into honey.

The beekeeper watching the season.

The moment the honey was ready.

The people who helped bring it from the hive to us.

And, sometimes, the ideas and experiments that came afterwards.

That's why we often say:

Honey doesn't begin in a jar.

It begins with a flower.

A landscape.

Thousands of bees.

And the people who care for them.

And perhaps that's what makes honey so special.

Something that looks so simple can carry such a long journey.

And sometimes, that journey doesn't end when the honey reaches the jar.
