What makes honey different?
It wasn't one big moment
There wasn't one big moment when we suddenly decided to start Hives Keeper.
It happened gradually.
My husband and I were becoming more conscious about what we ate and where our food came from. The more we learnt about raw honey, the more questions we had.
What makes one honey different from another? Where does its flavour come from? And what really happens before the honey reaches the jar?
We started looking closer.
We wanted to understand what makes honey different.
So we went to where it begins — the hives, the flowers, the landscapes and the people who care for the bees.
We didn't just visit bee farms. We kept bees ourselves.
So we went to where honey begins
We wanted to see it for ourselves. That took us to bee farms, forests and beekeepers in places like Western Australia and Northern Thailand. We had studied apiary and kept bees ourselves, but there was still so much to learn - about the places, the seasons, the bees, and the people who care for them.
That's when we realised honey carries a sense of place

Flowers bloom at different times, and every harvest reflects the season in which the bees were working.
And that changed how we think about honey
We started looking for honey that could tell us something about where it came from: the flowers, the landscape and the season.
Then we started wondering what else honey could become.
We began pairing raw honey with natural ingredients and superfoods — creating new ways to enjoy something we already knew so well.
Because to us, good honey isn't just about what's in the jar.
It's about everything that came before it — and everything it could become.
And eventually, it reaches a jar
What started with a few questions eventually became Hives Keeper.
Today, every jar we share carries a little of that journey: the flowers, the place, the bees, the people, and everything we've learned along the way.
We hope you can taste a little of that story too.
